Low-Carb Pumpkin Pancakes

Ingredients

  • 1 cup almond flour

  • ¼ cup organic pumpkin

  • 2 eggs

  • 1 tbsp Monk Fruit Sweetener

  • ¼ cup water

  • 2 tbsp coconut oil

  • 2 tsp cinnamon

Instructions

Mix together the almond flour, pumpkin, eggs, monk fruit sweetener, water, and melted coconut oil.

Note: Leave out the egg whites and mix them with a hand mixer separately -- add in later with spoon to create more fluffy pancakes. Scoop heaping tablespoons onto pan and cook on medium heat, flipping each pancake once to cook each side.
