Sweet Potato Hash
Ingredients
2 large, organic sweet potatoes
5 strips Pederson's bacon (no sugar)
2 cups Tuscan Kale
Bell peppers
Green onions
3 eggs
Simply Organic Dill Seasoning
Instructions
Place strips of bacon in skillet, once fully cooked remove from skillet.
Cut up sweet potatoes and veggies, mix and place in skillet.
Put stove on medium/high until sweet potatoes are softened (12-15 min).
Preheat oven to 425 degrees Fahrenheit.
Once sweet potatoes & veggies are soft, cut up bacon and mix in with the rest.
Crack eggs on top of everything and place in the oven.
Check occasionally until eggs are cooked to preference.
