Ingredients
¾ cup Monk Fruit Sweetener (or another low carb sweetener)
⅓ cup softened grass-fed butter
5 eggs
2 ½ cups almond flour
2 tsp cinnamon
1 ¼ cup shredded/grated carrots
Instructions
Preheat the oven to 350 degrees Fahrenheit.
Grease a 9 inch round cake pan with coconut oil or spray.
In a large mixing bowl, mix together the softened butter and sweetener.
Grate carrots until you have about 1 ¼ cup.
In another bowl, combine the almond flour, cinnamon and grated carrots.
Combine all of the ingredients in one large bowl and mix.
Pour the batter into the cake pan and bake for 40-45 minutes.
